Ingredients
2½ cups all-purpose flour
¾ cup lukewarm water
½ tsp salt
1 tsp neutral oil (optional)
For Sauce (optional):
3 tbsp soy sauce
1 tbsp black vinegar
2 tbsp chili oil
1 tbsp minced garlic
1 tsp sugar
Green onions & sesame seeds (for garnish)
Instructions
In a mixing bowl, combine flour, salt, and water. Knead for 8–10 minutes until smooth.
Cover and let the dough rest for 1 hour.
Shape dough into a thick rectangular block, oil the surface, and rest for another 20–30 minutes.
Slice thin ribbons directly into boiling water. Cook for 2–3 minutes until noodles float.
Drain, rinse briefly, and toss with sauce. Garnish and serve.
Notes
Bread flour gives a chewier texture.
Gluten-free flour can be used, though results may vary.
Add sautéed veggies or tofu for a full one-bowl meal.
