Ingredients
200g fettuccine pasta
½ cup unsalted butter
1 cup freshly grated Parmesan
Salt, to taste
¼ cup reserved pasta water
Optional: garlic, cream, nutmeg, pepper
Instructions
Boil pasta until al dente. Reserve ¼ cup pasta water.
Melt butter in pan. Add pasta and toss.
Off heat, stir in Parmesan gradually.
Add pasta water as needed to adjust texture.
Season and serve immediately.
